What each session covers
Six focused training formats, each built around a specific aspect of national cuisine — from foundational skills to regional specialties.
Foundations of National Cuisine
Core techniques and ingredient knowledge specific to Australian and regional cooking traditions. Covers knife skills, stock preparation, and classic base recipes used across multiple dishes.
Regional Dish Masterclasses
Deep focus on specific regional dishes — their history, correct preparation, and common mistakes. Each session covers one dish end-to-end with live demonstration and Q&A time.
Scheduled Weekly Practice
Regular short sessions focused on repetition and refinement. Participants cook the same dish multiple times across different weeks, building consistency rather than just familiarity.
One-on-One Instruction
Private sessions tailored entirely to your current level and specific goals. The instructor adjusts pacing and content based on what you actually need — not a fixed curriculum.
Menu Planning Guidance
Practical help structuring meals for occasions — family gatherings, cultural events, or everyday cooking. Covers portion planning, preparation sequencing, and substitutions for local ingredients.
Skill Assessment Sessions
A structured review of where you currently stand — what techniques are solid, which need attention, and what to focus on next. Useful before starting a new course or after a gap in practice.
How sessions are structured
Each session runs for 60 to 90 minutes over video call. The format is practical — you cook alongside the instructor rather than watching a recording. This means real-time correction and immediate answers to questions that come up during the process.
Sessions are recorded and shared with participants afterward. If something didn't work the first time, you can review the footage before the next meeting. Notes and ingredient lists are sent 48 hours in advance.
Scheduling is done through direct communication — no automated booking system. This keeps things flexible when life gets in the way, and avoids the situation where a missed session just disappears from your plan.
Vantico has been running online cuisine sessions since 2025, working with clients across Bundaberg and the wider Queensland region who want access to specialist instruction without travelling.

Getting started with a session
No intake forms, no long onboarding. Contact us directly and we'll figure out the right starting point together.
- 1 Send a message or call. Describe what you're trying to learn or what's not working in your current cooking. A brief conversation is enough to identify where to start.
- 2 Choose a format. Based on your goals, we'll suggest whether a one-off masterclass, regular weekly sessions, or a private one-on-one arrangement makes more sense.
- 3 Confirm a time. We'll agree on a session time that works for your schedule. You'll receive ingredient and equipment requirements 48 hours before.
- 4 Cook in your own kitchen. The session happens over video call. You work with your own equipment and locally available ingredients — no specialist gear required.
